Join us for Wine Maker Wednesday as we feature La Folia wine!
We will be pairing the wine’s of Ryan Teeter with dishes designed by our very own Chef Beverly Torrez-Petty.
Teeter’s wine has won awards from Calaveras County to Orange County as well as the San Francisco Chronicle Wine Competition and the Sunset Magazine International Wine Competition.
From vineyards in Amador County we’ll be offering La Folia’s 2014 Dolcetto and Vermentino.
Described as ‘light and fruity… with an earthy finish,’ La Folia’s Dolcetto will be paired with house made flatbread, lamb Bolognese, roasted red peppers, mushrooms, hot coppa salami, arugula and parmesano reggiano.
Teeter describe’s his Vermentino as having ‘a crisp citrus and slightly tropical flavor profile’ with ‘bright acidity… creamy texture and a slightly dusty finish.’ This will be paired with Salmon Crudo, lemon tarragon yogurt, fried capers, pickled red onions and focaccia crisps.
La Folia’s 2014 Sangiovese and NV Masquerade come from vinyards located right here, in Calaveras County.
This aromatic, Mtn. Ranch grown, Sangiovese boasts a bouquet of ‘strawberry, blueberry, leather and violet.’ It contains ‘notes of toasted vanilla, caramel and spice’ with a finish of ‘rasberry and buttercream.’ We will be pairing this with Roasted Garlic Gnocchi, sage brown butter, grilled squash, carmelized onions and cherry tomatoes.
‘White peach… apricot, quince and pear’ with ‘soft honeydew mid-palate’ make the NV Masquerade any fruit-lovers dream. It will be paired with Lemon scented angel food cake, raspberries, whipped amaretto cream cheese, peach sorbet and toasted almond crunch.
